If you open up my fridge right now, there is a 100% chance that there is homemade hummus front and center. Hummus is great because it’s easy to make, you don’t need wild ingredients, it’s inexpensive, and you can flavor it however you please!
I love seafood. And what’s better? Seafood with pasta. Pasta with Mussels is such an easy recipe to make. All you need are a few ingredients (most happen to be pantry staples for me), and some fresh mussels. The mussels cook in a pan and create their own sauce that’s silky, flavorful, and fresh. Lastly, add your favorite pasta and you’ve got an easy date night dinner!
So, I’m not gonna lie.. I have been eating tomatoes non-stop recently. Heirloom tomatoes, cherry tomatoes, green tomatoes… I am probably a day away from turning into a tomato. One of my absolute favorite ways to enjoy tomatoes are in my Bruschetta with Marinated Tomatoes and Pesto recipe. This dish is a fan-favorite, and is a must when entertaining in the summer.
If you’ve read some of my other recipes, you know that I am a huge fan of tequila (margarita, anyone?). One of my favorite foods is pasta, and I looooove vodka sauce! One day, I went to make my traditional vodka sauce recipe (from blog 1.0), and realized that someone finished the last of my vodka.. welp! I decided to take a leap of faith and tried using tequila instead. The result? DELICIOUS tequila sauce!
I don’t remember when I had falafel for the first time, only that I loved it ever since my first bite. Working in Boston, there are plenty of great spots to grab falafel for lunch. My favorites are Falafel King and Pita Thyme, but once we started working from home, I decided to try to make my own recipe.
