CHEESY JALAPENO CORN FRITTERS

Ingredients

You'll need: corn, jalapeno, scallions, egg, milk, salt, pepper, flour, monterey jack cheese, garlic.

Step 1

In a mixing bowl, combine all-purpose flour, baking powder, and salt. Mix well. Add the minced garlic to the dry ingredients.

Step 2

Whisk together milk and egg. Pour the wet ingredients into the dry mixture and stir until just combined.

Step 3

Gently fold in the fresh corn kernels, diced jalapeño, chopped scallions, and shredded Monterey Jack cheese.

Step 4

Heat the canola oil in a pan over medium-high heat. Once the oil is hot, spoon portions of the batter into the pan, forming small fritters

Step 5

Fry the fritters until they turn golden brown on one side, then flip and repeat on the other side.

Step 6

Once the jalapeño corn fritters are cooked, place the fritters on a paper towel-lined plate to absorb any excess oil.
