CHICKEN ESCAROLE SOUP

Ingredients

You'll need: boneless chicken, tortellini, escarole, leek, onion, garlic, celery, butter, seasoning, broth.

Step 1

Melt butter into olive oil. Add garlic, onion, sliced leeks, diced celery, and chopped scallions. Sauté until the vegetables are softened and aromatic.

Step 2

Pour in the chicken broth and bring the mixture to a slow simmer. Add cheese rind, lemon juice, salt & pepper. Simmer for 15 minutes.

Step 3

Add the chicken and escarole and let cook for another 5-7 minutes. 

Step 4

Just before serving, add the cheese tortellini directly into the simmering soup. Cook in the soup according to package instructions. 

Step 4

Ladle the Chicken Escarole Soup with cheese tortellini into bowls and serve hot. Optionally, garnish with additional scallions or a sprinkle of grated cheese.
