CREAMY LEEK RISOTTO

Ingredients

You'll need: butter, olive oil, shallot, arborio rice, chicken broth, parmesan cheese, leeks, salt & pepper. 

Step 1

In a large skillet or saucepan, heat the olive oil over medium heat. Add the shallot and garlic, sauté for about 2 minutes until softened.

Step 2

Add the sliced leeks to the pan. Cook, stirring occasionally. Season with a pinch of salt and pepper.

Step 3

Sauté for 2-3 minutes until the edges of the rice become slightly translucent. Pour in the dry white wine and cook until the wine is absorbed. Add broth.

Step 4

Add the chicken broth, one ladle at a time, allowing the liquid to be absorbed before adding the next ladle. Once absorbed add butter and cheese.

Step 5

Garnish with chopped parsley and additional grated Parmesan if desired.
