LOBSTER  RISOTTO

Ingredients

You'll need: lobster, risotto, garlic, butter, mascarpone, arborio rice, shallot, white wine, parmiggiano, lobster broth.

Step 1

In a large pan, melt 2 tablespoons of butter along with 1 tablespoon of olive oil over medium heat.

Step 2

Sauté minced shallot and  cloves of garlic until softened.

Step 3

Add Arborio rice to the pan, toasting it for a couple of minutes. Pour white wine, stirring continuously until it’s mostly absorbed by the rice.

Step 4

Add lobster broth to the rice one ladle at a time, stirring frequently. Allow the liquid to be mostly absorbed before adding the next ladle. Repeat until absorbed and al dente.

Step 5

Stir in mascarpone.Take the risotto off the heat and continue to stir.

Step 6

Add the reserved lobster meat. Stir gently to combine. 

Step 7

Add chives, parmesan and lemon zest and stir until combined.
