CREAMY TORTELLINI SOUP

Ingredients

You'll need: tortellini, italian sausage, kale, basil, olive oil, broth, diced tomatoes, tomato paste, garlic, heavy cream and onions. 

Step 1

Saute minced garlic and diced onion until softened and fragrant.

Step 2

Stir in double-concentrated tomato paste and cook for 1-2 minutes to enhance its flavor.

Step 3

Add the Italian sausage, breaking it apart with a spoon. Season with salt, pepper, and crushed red pepper flakes. Cook until the sausage is browned and cooked through.

Step 4

Pour in the diced tomatoes with their juice, and mix well. Add chicken broth and heavy cream and bring the mixture to a simmer.

Step 4

Next, add the Tuscan kale Simmer for an additional 10 minutes. Add the cheese tortellini in the last 5 minutes of cooking.
