WHIPPED EGGPLANT DIP

Ingredients

You'll need: eggplants, tahini, olive oil, salt, sumac, creme fraiche, garlic, maple syrup, lemon juice.

Step 1

Prick the eggplants all over with a fork and place them on a baking.  Brush them with olive oil.

Step 2

Roast the eggplants in the preheated oven for 40-45 minutes. Once cooled, slice them open and scoop out the flesh, discarding the skins.

Step 3

Add all ingredients to a food processor and blend until smooth. 

Step 4

Serve the dip with pita bread, crackers, or fresh vegetables for dipping.
