Ingredients
  

  • 1 1/4 cups pecans
  • 1/2 cup pepitas
  • 1 cup shelled unsalted pistachios
  • 4 cups old-fashioned rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 cup maple syrup
  • 1/2 cup olive oil
  • 2 teaspoons vanilla extract
  • 3/4 cups dried cherries

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line a rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine pecans, pepitas, pistachios, rolled oats, cinnamon, and salt.
  • Mix the dry ingredients thoroughly until evenly distributed.
  • Pour in maple syrup, olive oil, and vanilla extract, and mix well.
  • Transfer the mixture to the prepared baking sheet.
  • Press the pistachio granola down firmly.
  • Bake for a total of 25 minutes, stirring halfway through (at the 12-minute mark).
  • Press down again before continuing to bake until golden brown.
  • Allow the pistachio granola to cool for 1 hour.
  • After cooling, add dried cherries to the granola.
  • Enjoy your homemade pistachio granola!

Notes

Make sure to spread out the granola in one flat layer so it cooks evenly.
Gently stir the granola halfway through the baking time to promote even browning. This prevents clusters from forming too early and ensures a consistent texture.
Allow the homemade granola to cool completely on the baking sheet before breaking it into clusters. This helps it firm up, resulting in a satisfying crunch.
