Strawberry Spritz with St-Germain (Batch Recipe)

This strawberry spritz is made with a fresh homemade strawberry puree stirred together with St-Germain elderflower liqueur, then topped with crisp Prosecco and sparkling water. Light, floral, and ready in 10 minutes, this batch recipe serves 4 and is the perfect summer cocktail for any occasion that calls for something a little special.

Ingredients
  

  • 1 cup fresh strawberries hulled and halved
  • 2 teaspoons sugar optional, depending on how sweet your berries are
  • Juice of ½ lemon
  • 4 ounces St-Germain elderflower liqueur
  • 12 ounces chilled Prosecco about half a standard bottle
  • 4 ounces chilled sparkling water
  • Ice
  • Fresh mint sprigs for garnish
  • Sliced strawberries or lemon peel for garnish

Instructions
 

Make the Strawberry Purée

  • Blend 1 cup fresh strawberries with the juice of ½ lemon. Taste and, if needed, add 2 teaspoons of sugar and blend again. Optionally strain through a fine mesh sieve for a smoother purée.

Make the Cocktails

  • Add 2 tablespoons (about 1 ounce) of strawberry purée to each glass.
  • Add 1 ounce of St-Germain and stir gently to combine.
  • Fill each glass with ice.
  • Pour 3 ounces of Prosecco into each, then top with 1 ounce sparkling water. Give each drink a gentle stir.
  • Garnish with a sprig of mint and a strawberry slice or twist of lemon. Serve immediately.

Notes

Use the ripest strawberries you can find. This is the base of the whole drink; underripe berries will give you a flat, dull puree. Peak season strawberries make all the difference.
Strain the puree. It takes 30 seconds and gives you a much smoother, more elegant texture in the glass.
Don't over-stir once the bubbles are in. One gentle swirl is all you need; over-stirring knocks out the carbonation and flattens the drink.
Make the puree ahead. The strawberry puree keeps in the fridge for up to 2 days, making this perfect for entertaining. Mix the puree and St-Germain in a pitcher ahead of time and add the Prosecco just before serving.
Storage: Leftover puree keeps in an airtight container in the fridge for up to 2 days. The assembled spritz is best enjoyed fresh; once the bubbles are in, serve immediately.
