Strawberry Spritz with St-Germain (Batch Recipe)
This Strawberry Spritz is what I make when fresh strawberry season hits and I want something that feels a little special. A homemade strawberry puree is stirred with St-Germain elderflower liqueur, then topped with crisp Prosecco and a splash of sparkling water for a light, floral, and just-bubbly-enough cocktail. This recipe makes 4 spritzes, making it perfect for brunches, girls nights, and backyard gatherings. The puree sounds like an extra step but I promise it is easier than it sounds.

This is my go-to for girls nights when we want something elegant and relaxed without any fuss. St-Germain is what sets this apart from your average fruit spritz; its floral, delicate flavor pairs with fresh strawberries in a way that feels genuinely elevated without trying too hard. Ingredients Notes

The strawberries are everything here; use the ripest, sweetest ones you can find because they are the base of your puree and the flavor of the whole drink depends on them. St-Germain is non-negotiable; its elderflower notes do something really special with fresh strawberry that no other liqueur replicates. For the Prosecco, go dry and crisp rather than sweet; the strawberries and St-Germain bring plenty of natural sweetness on their own. And strain the puree through a fine mesh sieve if you can; it takes 30 extra seconds and gives you a much smoother, more elegant drink.
How to Make a Strawberry Spritz

- First let’s make the strawberry puree. Blend 1 cup fresh strawberries with the juice of ½ lemon. Taste and, if needed, add 2 teaspoons of sugar and blend again. Optionally strain through a fine mesh sieve for a smoother purée.

2. Add 2 tablespoons (about 1 ounce) of strawberry puree to each glass.

3. Add 1 ounce of St-Germain and stir gently to combine.

4. Now to add the bubbles! Fill each wine glass with ice. Pour 3 ounces of Prosecco into each.

5. Then top with 1 ounce sparkling water or soda water . Give each drink a gentle stir.

6. Finally, garnish and serve! Garnish with a sprig of mint and fresh strawberry slices or twist of lemon. Serve immediately.

Ingredients
- 1 cup fresh strawberries hulled and halved
- 2 teaspoons sugar optional, depending on how sweet your berries are
- Juice of ½ lemon
- 4 ounces St-Germain elderflower liqueur
- 12 ounces chilled Prosecco about half a standard bottle
- 4 ounces chilled sparkling water
- Ice
- Fresh mint sprigs for garnish
- Sliced strawberries or lemon peel for garnish
Instructions
Make the Strawberry Purée
