Mix the salt and pepper together and set aside. Now, start by mashing your avocado. Add fresh avocado to a small bowl with half of the lemon juice and half of the salt and pepper. Mash the ingredients together with a fork until creamy.
Add the arugula to a new bowl. Add 3 tbsp olive oil and the remaining salt and pepper mixture and the remaining lemon juice. Next, add the sliced radish, torn mint leaves, and 3 tbsp parmigiano reggiano. Toss to combine and set aside.
Toast your sourdough bread. Then, assemble the tartines by spreading the mashed avocado on each slice of toasted sourdough.
Top each piece with arugula salad. Serve immediately.
