The Best Avocado Tartine - A Mouthwatering French Breakfast

This avocado tartine recipe is inspired by Tatte Bakery. Piled high with lemony arugula and sweet, sliced radishes, it's a perfect breakfast or lunch.

Ingredients
  

  • 2 slices sourdough bread
  • 1 1/2 cups arugula
  • 1 avocado
  • 3 radishes, sliced
  • 3/4 teaspoon salt
  • 3/4 teaspoon pepper
  • 1 1/2 tablespoons olive oil
  • 3 tablespoons parmigiano reggiano, grated
  • 1 lemon, juiced
  • 8 mint leaves, torn

Instructions
 

  • Mix the salt and pepper together and set aside. Now, start by mashing your avocado. Add fresh avocado to a small bowl with half of the lemon juice and half of the salt and pepper. Mash the ingredients together with a fork until creamy.
  • Add the arugula to a new bowl. Add 3 tbsp olive oil and the remaining salt and pepper mixture and the remaining lemon juice. Next, add the sliced radish, torn mint leaves, and 3 tbsp parmigiano reggiano. Toss to combine and set aside.
  • Toast your sourdough bread. Then, assemble the tartines by spreading the mashed avocado on each slice of toasted sourdough.
  • Top each piece with arugula salad. Serve immediately.

Notes

  • Avocado ripeness – Make sure your avocados are ripe! If the avocados have some brown spots, that’s okay because it’ll be hidden in this avocado tartine.
  • Use the best produce you can find – The fresh produce is the star of this dish – make sure your greens are crisp and bright for this avocado tartine
