Easy Avocado Tartine Recipe (Perfect for Brunch)

This easy Avocado Tartine recipe is one of my favorites on this blog. Inspired by Tatte Bakery, this tartine is piled high with lemony arugula and sweet, sliced radishes. It will instantly transport you to a French bistro. It’s a simple avocado toast, but kicked up a notch! 

The best part about this recipe is that it’s essentially a no-cook meal. All you need to do is toast your sourdough for the perfect avocado tartine. Tartine is most often served for breakfast, but you could also have this for lunch. This avocado tartine is very special to me. It is inspired by Tatte Bakery ‘s menu item of the same name, which is topped with poached eggs. I would order this tartine from Tatte all the time when I worked in Boston before the pandemic hit. I’ve missed it so much that I decided to recreate it at home. Spoiler: mine is even better, and it costs less! Trust me, this is the best avocado toast ever.

Although Tatte inspires this dish, tartines weren’t invented by the eatery. The concept of tartines originates from France, where it has been a traditional part of French cuisine for centuries. However, the word “tartine” refers to a slice of bread with a spread.

However, tartine has evolved into open-faced sandwiches featuring a variety of toppings. Tartines originated as a simple and practical way to enjoy bread with different accompaniments. However, tartines have since become a versatile and globally embraced culinary trend.

  • Sourdough bread –Toasted sourdough provides a crunchy base, complementing the creamy avocado topping. You must use good bread! I much prefer sourdough for an authentic tartine taste.
  • Avocado – Ripe avocados, mashed and spread, offers a rich, buttery texture to the tartine.
  • Arugula – Peppery arugula adds freshness, balancing avocado richness with its crisp texture.
  • Olive oil – A drizzle enhances taste, imparting a luxurious silkiness to the creamy avocado tartine.
  • Sliced radish – Thin radish slices provide a refreshing crunch, contrasting with creamy avocado.
  • Mint leaves – Fragrant mint leaves elevate freshness, creating a delightful interplay of flavors in the tartine. Fresh herbs are a must when making a tartine!
  • Parmigiano Reggiano – Grated Parmigiano Reggiano adds a savory depth, harmonizing with other ingredients in the tartine.

  • Black pepper and kosher salt  – Don’t skimp on the seasonings here! A generous pinch of salt makes a huge difference in the creamy avocado spread and in the arugula salad. 

Substitutions and Additions

  • Add eggs – Top the tartine with perfectly poached or soft-boiled eggs. The runny yolk adds a luscious, creamy element that complements the avocado, creating a more substantial and satisfying dish.
  • Smoked salmon – Add smoked salmon on top of the avocado for a luxurious twist. 
  • Cherry tomatoes – Slice or halve cherry tomatoes and arrange them on top of the avocado for a burst of sweetness and juiciness. The tomatoes add a colorful and vibrant touch to the tartine.
  • Balsamic glaze drizzle – Finish the tartine with a drizzle of balsamic glaze for a sweet and tangy flavor enhancement.
  • Add some heat – Add some red pepper flakes tor chile flakes to your creamy avocado spread and use them to top the salad. 
  • Different bread – You can use whole-grain bread and whole-wheat bread for this basic recipe, sourdough is best, though! 

Step by Step Instructions

Step 1: Mix the salt and pepper together and set aside. Now, start by mashing your avocado. Add fresh avocado to a small bowl with half of the lemon juice and half of the salt and pepper.

Step 2: Mash the ingredients together with a fork until creamy.

Step 3: Add the arugula to a new bowl. Add 3 tbsp olive oil, the remaining salt and pepper mixture, and the remaining lemon juice.

Step 4: Next, add the sliced radish, torn mint leaves, and 3 tbsp parmigiano reggiano. Toss to combine and set aside.

Step 5: Toast your sourdough bread. Then, assemble the tartines by spreading the mashed avocado on each slice of toasted sourdough.

Step 6: Top each piece with arugula salad. Serve immediately.

Tips and Notes

  • Avocado ripeness – Make sure your avocados are ripe! If the avocados have some brown spots, that’s okay because they’ll be hidden in this tartine.
  • Use the best produce you can find – One of the best tips I have is to make sure to use fresh produce! Your greens should be crisp and bright for this avocado tartine.

Preparing Avocado Tartine Ahead of Time:

  1. Toast bread separately -Toast the bread slices separately to maintain their crispiness. Allow them to cool completely before assembling the tartines.
  2. Mash avocado with lemon juice – Mash the avocados and mix them with a splash of lemon juice to prevent browning. Season with salt and pepper. You can also add any desired herbs or spices at this stage.
  3. Prepare toppings – If you’re including toppings like sliced radishes or cherry tomatoes, prepare them in advance and store them separately.
  4. Keep ingredients separate – Store the mashed avocado and toppings separately in airtight containers to prevent the bread from becoming soggy.
  5. Assembly before serving -Assemble the tartines just before serving to maintain the freshness and texture of the ingredients.

  1. Store components separately – Keep the toasted bread, mashed avocado, and toppings in separate airtight containers or plastic wrap.
  2. Avocado preservation – If you have leftover mashed avocado, press a piece of plastic wrap directly onto the surface to minimize exposure to air, which helps slow down browning. Refrigerate it.
  3. Refrigeration – Store all components in the refrigerator if you’re preparing the tartines a few hours or up to a day in advance.

Serving Later:

  1. Bring to room temperature – Before serving, allow the components to come to room temperature. Cold ingredients can mute flavors, and bringing them to room temperature enhances the overall taste.
  2. Assemble just before serving – Place the toasted bread on a serving platter and spread the mashed avocado evenly. Add your toppings and any finishing touches just before serving.

Ingredients
