Recipe Highlights: Strawberry Spritz
- Inspiration: This strawberry spritz cocktail takes its cues from classic Northern Italian spritzes but with a fruity twist and a strawberry flavor perfect for summer.
- Best Served For: It’s perfect for a special event, a brunch with friends, or a lazy afternoon by the pool.
- What Makes It Special: The fresh strawberry puree adds vibrant, juicy flavor without overwhelming sweetness, while the St-Germain brings a delicate, floral note that perfectly balances the crisp, bubbly Prosecco.
- Elevate Your Spritz: Try garnishing with an edible flower or a twist of lemon for a stunning presentation perfect for strawberry season!
Ingredients Notes

- Fresh Strawberries: Go for the ripest, sweetest strawberries you can find for maximum flavor. This is the base of your strawberry puree, which makes the difference between a good drink and a great one.
- St Germain (Elderflower Liqueur): This elderflower liqueur adds a floral, slightly sweet note that perfectly complements the fresh fruit. If you don’t have St-Germain, you could try another floral liqueur, but it’s hard to beat the classic.
- Prosecco: A dry, crisp Prosecco keeps this spritz bright and refreshing. Look for a bottle that’s not too sweet, as the strawberries and elderflower liqueur add natural sweetness.
- Fresh Mint: A sprig of mint is a must for that burst of freshness with every sip. Lightly slap the mint between your palms before garnishing to release its aroma.
Suggested Ingredient Substitutions and Additions
- Swap St-Germain for Limoncello for a bright, citrus-forward twist.
- Use Rosé Prosecco for a slightly more fruity, pink spritz.
- Add a splash of gin if you want a bit more kick.
- Try fresh basil instead of mint for a more herbal, slightly peppery finish.
- Add citrus like lime juice or lemon juice and a slice of lemon for a nice refreshing twist!
How to Make a Strawberry Spritz

- First let’s make the strawberry puree. Blend 1 cup fresh strawberries with the juice of ½ lemon. Taste and, if needed, add 2 teaspoons of sugar and blend again. Optionally strain through a fine mesh sieve for a smoother purée.

2. Add 2 tablespoons (about 1 ounce) of strawberry puree to each glass.

3. Add 1 ounce of St-Germain and stir gently to combine.

4. Now to add the bubbles! Fill each wine glass with ice. Pour 3 ounces of Prosecco into each.

5. Then top with 1 ounce sparkling water or soda water . Give each drink a gentle stir.

6. Finally, garnish and serve! Garnish with a sprig of mint and fresh strawberry slices or twist of lemon. Serve immediately.

Instructions
Make the Strawberry Purée
- Blend 1 cup fresh strawberries with the juice of ½ lemon. Taste and, if needed, add 2 teaspoons of sugar and blend again. Optionally strain through a fine mesh sieve for a smoother purée.
Make the Cocktails
- Add 2 tablespoons (about 1 ounce) of strawberry purée to each glass.
- Add 1 ounce of St-Germain and stir gently to combine.
- Fill each glass with ice.
- Pour 3 ounces of Prosecco into each, then top with 1 ounce sparkling water. Give each drink a gentle stir.
- Garnish with a sprig of mint and a strawberry slice or twist of lemon. Serve immediately.
Notes
- Keep it Cold: Use well-chilled Prosecco and sparkling water for the best results.
- Balance the Sweetness: If your strawberries are especially sweet, you might not need the added sugar in the purée. Taste before adding.
- Gentle Stir: Don’t over-stir the drink once the bubbles are in—just a quick swirl to combine.
- Fresh Mint Only: Use fresh, vibrant mint for the best flavor. Dried or wilted mint just won’t cut it.
Serving Suggestions:
- Wine Pairing: This pairs beautifully with a crisp Sauvignon Blanc if you want to keep the party going.
- Light Bites: Serve alongside prosciutto-wrapped melon, a simple caprese salad, or your favorite charcuterie board.
- Elevated Picnic: Pack these in a cooler for a beach day or picnic and enjoy with fresh fruits and cheeses.
- Special Touch: Add an edible flower for a touch of elegance.
Storage Instructions:
- Strawberry Purée: Store any leftover purée in an airtight container in the fridge for up to 2 days. It’s great for a next-day round or even drizzled over desserts.
- Leftover Spritz: This drink is best enjoyed fresh, but if you need to make a big batch, mix the purée and St-Germain ahead of time, then add the bubbles just before serving.
